Lots of Greens and Some Sweats

I have been eating lots of salads lately. There is just something about spring and salads… Plus, once I like something, I could eat it every day (and I usually do, at least for lunch when I don’t annoy my family with the same food over and over)…

I’m also trying to pay more attention to my protein intake lately, so I have made sure to add protein to my salads.

One of my favorite protein salad “toppers” is salmon salad, and I had it several times last week. This is just some Romaine lettuce with avocado, topped with salmon salad.

Salmon Salad
  • 1 can skinless, boneless wild salmon
  • Juice of 1/2 lemon
  • 1 tablespoon Wasabi mayonnaise
  • 1 teaspoon capers
Mix all ingredients together. Enjoy!

On Thursday, I met Lara, and we celebrated her birthday with some salads at Pluto’s, a salad place that lets you customize your salad. I got mixed greens, topped with a grilled Portobello mushroom. There were also seven “add ons,” but you can’t see most of them as they are on the bottom of the plate. Here is what I got:
  • Mixed greens
  • Grilled Portobello mushroom
  • Marinated mushrooms
  • Tomatoes
  • Cucumbers
  • Kidney beans
  • Chickpeas
  • Peas
  • Corn

I got a balsamic vinaigrette on the side. The salad also came with some French bread, which I usually don’t eat, but I was in the mood and really enjoyed it.

There is a cupcake place right next to Pluto’s, and so we got a cupcake to celebrate Lara’s birthday. Since we were quite full from the huge salads, we split the cupcake. We got the flavor of the month -Smores!

    I've been eating a lot of wraps and stir-fries. I'm glad that I started the new challenge to change a little bit!

  3. i eat salads year round, but i definitely crave them more when the weather warms up. i like the look of that s'mores cupcake!

    I tend to eat the same things over and over and then one day it's like BAM, Im tired of it.

    Ive been eating a lot more roasted brocolli lately.

  6. Oranges and grapefruit! They are so sweet and juicy right now that I can't get enough of them. We also had kiwi in our bin last week and they were wonderful. We haven't had kiwi in years and I don't know why.

  8. I have no foods I eat a lot, I try to vary. But what I do eat often and a lot are oranges and apples.

  10. Crazy looking cupcake, in a good way of course. I have been eating a lot of cheese lately but only cause it is so good here. I love salmon salad. I have been doing mine with laughing cow lite cheese.

  11. I totally know what you mean about springtime and salads - I've been craving them like mad!

    That cupcake looks awesome. I'm picky about my sweets (I'm not much of a dessert person - I don't like the super sweet stuff) but next time I go to the store I plan on buying some sea salt dark chocolate! Yummmm.

    Oh my, that cupcake looks amazing. I am on a salad kick these days too- everything tastes so fresh and delicious as the seasons change. I made salmon salad too (with chickpeas, dried apricots and Morrocan dressing).

    I've been eating a lot of salads lately, as well! I've been added cheese but I should get some protein in there. Last night out for a fancy dinner hubby and I split a raspberry soufflés. Yummm!

  18. I have also started the salad thing as the weather warms up. I made a grill vegetable salad yesterday as it was so nice outside.

    Oooh....the wasabi mayo must be so good with the salmon :)

    Answering your q, I've been eating a LOT of grapes lately. I think I'm trying to cram in as many as I possibly can before they're out of season. I'm going to turn into a grape.

    I have been eating a lot lately, so many cravings (it's that time of the month... anybody else have that connection?)

    I ate a lot of salad, chocolate (dark) and eggs. But I crave seafood and bread. haha

  26. I tend to have lunch trends too... :-) My current one is Spinach and hummus sandwiches! :-) Your salmon salad sounds incredible - love the addition of the wasabi mayo! Serious yum! :-)
