Happy Monday and Weekly Meals

Why do we sometimes dread Mondays so much? Is it because we often have less freedom Monday through Friday? Is it because we truly dislike what we do for a living? Or is it just a habit to dislike Mondays, and Mondays are really not that bad after all? I definitely love my weekends because I get to spend time with my family and have more freedom to do what I want. And sometimes on Sunday afternoons I think, “I can’t believe it’s Monday tomorrow. Where did the weekend go?”

But since I made a career change and now do what I truly enjoy (at least 95% of the time; there are negative elements to any job…), I don’t dread Mondays anymore. However, several years ago, I dreaded Mondays so much that I sometimes would get physically ill (but I still went to work on Monday!). I didn’t like my job, and it didn’t match my interests, values and beliefs. Life is too short to truly dislike Mondays! :-)

Okay, on to this week’s meals:

Monday: Chicken Stew with Kimchi (Korean Pickled Cabbage) and rice. I actually made the stew last night, so it's ready to heat up tonight...

Tuesday: Garlic Pasta with Creamy Mushroom Sauce and a Salad.

Wednesday: It’s Wrapped Up Wednesday.” We’ll have marinated tofu and veggies wrapped into Savoy cabbage leaves. On the side we’ll have a ginger dipping sauce.

Thursday: Vegetable Fried Rice.

Friday: It’s Salad Friday. I picture many colors… :-)

Questions: Do you like Mondays? Why or why not? And, what are you eating this week?

    Dinners look good as usual. And I bet your Monday will be even better now that you already have dinner made!

  4. Now that I'm retired, I love Mondays! I have the house and remote to myself again! lol I do a rough food plan when I see what I'll be getting in my vegetable delivery and then prepare the fruits and vegetables for salads or whatever dish they will be going into. I just hate peeking into the vegetable drawer on Thursday afternoon to see what I'll be putting into my clean out the fridge Friday soup or casserole and finding something wonderful that I forgot to use during the week!

  6. Sunday is my favorite day of the week because I mostly spend it in the kitchen!

    Don't mind Monday's though - just sometimes its hard to get up!

    I am suddenly reminded of that song "I don't like monday's" by The Boomtown Rats.

  11. I like Mondays b/c it's the day of the week that I really enjoy this one particular yoga class i take. but if it fell on thursdays, then no, I wouldnt like mondays :)

    glad to hear you're liking the job and that things are going well...it seems like an overnight success on that front!

  12. Happy Monday! Honestly, Mondays do not bother me except that I'm usually a little bummed the weekend is over. Your meals sound fantastic!

  13. Mondays are my tough day since I teach that night, but for me it is early Tuesday, like right now I am waiting to teach my 10 pm EST class, but that is 2 am for me on Tuesday.

    Great looking meals for the week. I wish I could plan and actually prepare meals during the week like you do. I can do some nights, but not all.

  14. Wow - you have LOTS of great recipes this week!! I hate Mondays as I'm usually tired and depressed from the end of a weekend... BUT I love to get charged back up, get back on the workouts, get the new meal plan rolling, etc. So i'm indifferent!

  15. Thanks for all your support. Hum, Mondays... I love them, it's like a new chapter in a book. Anything can happen, and it's a good day to get stuff done which feels great! The garlic mushroom pasta is something i would love, excited to toss some together real soon. Thanks!

  16. Andrea, I'm so embarrassed to admit this, but I have no clue what you do! HAve you told us before? Maybe I know, but I have just forgotten.

    I dread Mondays to. It's the day when I always end up getting a million e-mails and phone calls. It's like everyone's day to "catch up" and tings get thrown on me all the time. I am also in a bad mood at night because of how busy I am during the day! IT stinks. I try to stay positive though.

    Wrap up Wednesday sounds fantastic, by the way!

  17. Mondays are ok. I'd rather have a Saturday! I don't dread coming to work, and knowing it enables me to do the things I really want makes it easier to be here.
    This week we're eating some Mexica, Mahi Mahi, probably soup at some point, my parents are comign on the weekend so hopefully something impressive, but I haven't had time to figure it out yet!

  19. I think I dread Mondays just for the fact that the weekend is coming to an end. It definitely helps having switched to 4 tens though I must say.

  21. I always hate seeing the weekends go! then again, I'm not totally happy with my current either. I do like Mondays in that there is usually lots to catch up on and it goes by faster :) have a good week, all your eats sound great!

  23. It is amazing how much a career change can affect your Mondays. I was physically ill last year when I was working. So glad that I quit, although I'm still in that what-should-i-do-with-my-life stage, but hopefully will find out soon enough (will take a better look at your hubby's website :)). I'm still thinking about teaching at a community college :) Sounds like a rewarding job!

    I had a delicious pot of kimchi stew yesterday too!

  24. I hate Monday's...but not as much as Sunday's. Sunday's is the dread of Monday which is typically worse than Monday itself :) I make no sense, I know!

    This week: pear-cherry crisp, vodka sauce on whole wheat penne...and that's all I've got! Hubby's out of town so it's a light week in the kitchen :)

  25. It's weird, but when I worked full-time at a newspaper, I didn't like Mondays, because it meant the weekend had ended. But now that I work from home, I kinda like Mondays. It means the start of a fresh week at hand with so many things to cross off my new to-do list.
