Lots of Greens

Yesterday, we went to Fresh Choice right before 5:00 p.m. and got dinner for $6.99 a person (and since the toddler is 2, he eats for free!).

I got a nice plate of greens with fresh, delicious salsa instead of salad dressing. I also squirted a bit of fresh lemon juice over the top. It was delicious.

Here is what I put on my salad (as far as I remember):
  • Baby spinach
  • Spring mix lettuce blend
  • Beets
  • Carrots
  • Edamame
  • Corn
  • Peas
  • Red cabbage
  • Tomatoes
  • Garbanzo beans
  • Blue cheese
  • Pumpkin seeds
  • Salsa
  • Lemon Juice

I have said this before, while I love making salads, it’s very nice to have others prep all the veggies for you. Hubby, are you reading?!!!? :-)

And this morning I had more “greens” in the form of Amazing Grass. I tried the Amazing Meal Chocolate Infusion sample with almond milk.

I really enjoyed the taste of the chocolaty milk, but the texture was a bit grainy. I think I may have not mixed it up enough. It’s definitely a drink I would have again, and it’s a quick breakfast when you are running late. Here is a closer look at the ingredients and nutrition info.

Question: Have you been eating enough greens lately? If not, what do you plan on doing to change this?

  1. Mmm...I love Fresh Choice! I always make a massive salad like that and usually have a cup of soup, too!
    I think the greens + almond milk is a good idea for a quick breakfast. I really like the Amazing Meal in smoothies though, it's less grainy that way.

  4. Gotta love when they're still under 2! The salad looks great. I probably don't get as many greens as I should, but I make sure whenever I eat out I always get salad or a green veggie. Most of the time I eat broccoli at home.

  5. Love that huge salad, Andrea! I like the chocolate Amazing Grass but also find it a bit grainy. To combat this I fold it into pancake batter or mix it into a smoothie. I've even used it in my oats!

  9. I find I need to mix a banana or some fruit in with my amazing grass so that it's not grainy. I hope I'm getting enough greens! A salad and smoothie a day, cooked veggies at dinner.

    I had edamame in my salad today too :)

  12. That salad sounds AMAZING!!! I know I have been getting enough greens lately because I've been making a shake, everyday, with TONS of spinach in it, plus I'm addicted to kale chips..so, I'm good :) I do use Amazing Grass too, which I enjoy, but I'll be doing a post about it tomorrow, regarding the "claims" it makes, and how I don't think it's really worth all the money. However, I still buy it, but only when it's on sale. It was 10 dollars off the other day, score!

  14. Excellent salad loaded with delicious and healthy veggies! We try to get our greens on most days, had a little salad to go with our dinner tonight.
