Easy and Fast Bok Choy and Shrimp Stirfry

I had some leftover baby bok choy from my CSA delivery in the fridge and wanted to use it up. I decided to make a super quick stir fry with shrimp.

Ingredients
  • Olive oil
  • Baby Bok Choy, cut into bit-sized pieces
  • Shrimp
  • Soy sauce
  • Sesame oil
  • Brown rice vinegar
I heated up a bit of olive oil and sautéed the baby bok choy for a minute. Then I added the shrimp and sautéed them until they just turned pink. I seasoned the stir fry with soy sauce, sesame oil, and brown rice vinegar. I served the stir fry on top of some leftover brown rice. Now that's my definition of fast food!

  1. Mmmm, I would love that meal! I love bok choy and I find that sesame oil adds such a deep richness to everything! Even the smallest bit adds so much to a dish!
    My favorite lunch is an enormous salad with chickpeas, avocado, hummus, every veggie available, I could go on and on.

  10. That really looks like a fresh and yummy meal. Favorite fast lunch would have to be rice noodles, and stir fry veggies with sweet chili sauce!

  12. Yum! This is definitely my kind of meal. I love shrimp, and anything with rice and I'm hooked.
    Lately I've been doing a lot of veggie stir-fries for lunch. I don't know if they're necessarily "quick," (lots of chopping!), but they are tasty and filling!

    Quick lunch is a salad or soup...I'm so boring! Leftovers, too...those are quick and easy...and what I end up eating at my desk everyday anyways!

  14. bok choy multiplies in CSA boxes :) never had so much in my life as when i had my CSA. i love it tho and it's one of the best veggies sources of calcium there is, that and sesame seeds.

  16. My favorite fast lunch has to be Chinese pork buns that I keep in the freezer. I take two out, nuke them, and in a minute have a warm, filling, satisfying lunch. ;)

  19. I've never been able to find baby bok choy. Love quick, easy and healthy meals like that. I think my favorite quick meal is "super eggs" which is basically veggies and eggs sauted together with a bit of cheese. Love it :)
