Tomato Love

I have said it before, I love, love, love tomatoes. If I could eat only one food for the rest of my life, I'd pick tomatoes. I never get tired of tomatoes. So I'm very excited that we finally have lots of homegrown tomatoes:

And the toddler is excited, too. Well, to be honest, round, colorful things in general excite him... :o)


We usually eat most of the tomatoes just as they are. But today, I'll make a very simple pasta dish as well as a salad with them for lunch:

Tomato-Garlic-Basil Pasta Sauce
  • Olive oil
  • Garlic, chopped
  • Cherry tomatoes, cut in half
  • Salt & pepper to taste
  • Basil, shredded
  • Shredded Parmesan Cheese
Heat olive oil, and saute the garlic, making sure it doesn't burn. Add the tomatoes, and let them simmer for a few minutes. Season with salt and pepper. Toss the sauce with cooked pasta. Top the dish with basil & Parmesan cheese. Enjoy!

To me this dish screams summer. Yes, I know... You all know by now that I love my tomatoes and are probably getting a bit sick of hearing it...

I'll also make a Tomato/Mozzarella Salad
  • Fresh Mozzarella, cut into slices
  • Tomatoes, cut into slices
  • Salt & Pepper
  • Olive Oil
  • Balsamic Vinegar
  • Basil
Arrange the mozzarella and tomato slices on a plate, alternating between the cheese and the tomatoes. Whisk together olive oil, balsamic vinegar, salt and pepper. Pour over the salad. Top the salad with basil. I actually like to tuck whole basil leaves in between the mozzarella and tomato slices.
