Tomato Love

I have said it before, I love, love, love tomatoes. If I could eat only one food for the rest of my life, I'd pick tomatoes. I never get tired of tomatoes. So I'm very excited that we finally have lots of homegrown tomatoes:

And the toddler is excited, too. Well, to be honest, round, colorful things in general excite him... :o)


We usually eat most of the tomatoes just as they are. But today, I'll make a very simple pasta dish as well as a salad with them for lunch:

Tomato-Garlic-Basil Pasta Sauce
  • Olive oil
  • Garlic, chopped
  • Cherry tomatoes, cut in half
  • Salt & pepper to taste
  • Basil, shredded
  • Shredded Parmesan Cheese
Heat olive oil, and saute the garlic, making sure it doesn't burn. Add the tomatoes, and let them simmer for a few minutes. Season with salt and pepper. Toss the sauce with cooked pasta. Top the dish with basil & Parmesan cheese. Enjoy!

To me this dish screams summer. Yes, I know... You all know by now that I love my tomatoes and are probably getting a bit sick of hearing it...

I'll also make a Tomato/Mozzarella Salad
  • Fresh Mozzarella, cut into slices
  • Tomatoes, cut into slices
  • Salt & Pepper
  • Olive Oil
  • Balsamic Vinegar
  • Basil
Arrange the mozzarella and tomato slices on a plate, alternating between the cheese and the tomatoes. Whisk together olive oil, balsamic vinegar, salt and pepper. Pour over the salad. Top the salad with basil. I actually like to tuck whole basil leaves in between the mozzarella and tomato slices.

  1. Yes, definitely love tomatoes. I got our plants in the ground late so ours are still green. My fav way to eat them is on sandwiches or in salad, but your simple sauce sounds great! As you describe it, I'm guessing you don't cook them long enough for the skin to come off? Do you even blanch them? It seems like so much work.

    I used to blanch tomatoes a lot, something I watched my mom do all the time.

    For this recipe, I cook the tomatoes for a very short time, probably not much more than a minute. A few of the skins come off, but hubby and I don't really mind, especially with cherry tomatoes. I do however usually find a few skins on the teenager's plate, flicked to a corner of his plate... :)

  3. I love tomatoes too and sometimes I I am not in the mood.
    That just happened to me and is why I sun-dried mine.
    I love them in salads and sandwiches too.... but I'd have to say a good SAUCE is where my heart is... (would have to go with my love for PASTA I guess.)

    so happy you have home grown tomatoes. That's when they're the best EVER!!!!

  5. Ya know, I've never understood people who don't like tomatoes! I love them, in any shape or form. As at kid, however, I hated it when I would eat pizza or spaghetti and the skins of the tomato in the sauces would curl up and make those little tiny red skin flakes...do you know what I'm talking about? Anyway, I love eating whole tomato chunks on pizza, while it's nice and hot with a slightly browned and crispy skin...yum!

  6. Haha, I love tomatoes, but only when cooked as sauces or mixed with other ingredients. I'm not a big fan of tomatoes by itself in its raw form. But I heard tomatoes aren't very nutritious that way anyway.

    And, i agree- I love tomatoes - any way! Raw, in salsa, in salad, in pasta sauce...any way you can imagine.

    I'm always suspicious of people who don't like tomatoes : )

  10. Those tomatoes are gorgeous! I'm a city girl right now so haven't been growing my own. But I got some terrific heirloom tomatoes at the greenmarket yesterday and made a tomato and peach Caprese salad (posted at smartpalate.blogspot.com).

Yum, yum yummy - i'm obsessed with tomatoes, pasta sauce, caprese salads, etc. I always have the following on hand: "slicer" tomatoes - fat ones for slicing; roma tomatoes - smaller ones for baby slices; and grape and/or cherry tomatoes for salads and pizzas!!! They're my fave - right up there with mushrooms!

  13. that tomato/mozzerella salad sounds fab!!! i'm gonna need to try it VERY soon. for cherry or grape tomatoes, i just pop them in my mouth! for bigger tomatoes, i slice them to put on sandwiches. i always manage to eat a slice or two plain while i'm making my sandwiches!
