Greek-Inspired Salad

Lunch was a Greek-inspired salad. I got the idea a few weeks ago when Angie commented after a post where I asked for salad ideas. She makes a Greek salad with a feta dressing. I have made variations of this salad several times over the last few weeks; it's delicious! Today, we were unfortunately out of olives, but the salad still tasted great!

To me, the best part of this salad is the dressing and the lemon juice in it. It's funny, because I used to hate lemon juice in salad dressing. Growing up, we NEVER bought salad dressing but always made our own, all-natural salad dressing with LOTS of lemon juice. And I HATED lemon juice in salad dressing. And I also hated the lecture my mom gave me every time I asked why we couldn't be "normal" and eat delicious, bottled salad dressing (with all the nice chemicals in it)!

Here is today's Greek-inspired salad dressing (I slightly change it every time I make it...):
  • Juice of two lemons - Yes, it's very lemony! Use less, if you don't LOVE lemons... :o)
  • Greek non-fat yogurt
  • feta cheese
  • salt
  • pepper
  • [Angie uses a bit of mayonnaise instead of the Greek yogurt; that's also a very nice variation of this dressing.... :o)]
